Tasting the Holiday Spirit
Each holiday season brings cherished memories and traditions from years past . We expect certain things to never change. They will forever look, smell and taste just as we remembered.

These dishes evoke memories and customs that lead us on a nostalgic journey through family history. Though they remind us of the void left by those no longer at the table, they also render hope with the birth of new traditions.

Perhaps that is why some dishes continue to remain on the menu for reasons beyond anyone's knowledge. It may also explain an unwillingness to substitute ingredients or change methods in the kitchen.

During the season, food represents joy, desire, need, libation and indulgence. It need not be fancy or expensive. For some it may not be abundant or sufficient. But however much there is and whatever it may be, it reminds us to appreciate what and who we have in our lives.

From the eye-grabbing roast at the center of the table to the melting, bubbling and steaming dishes around it, dive into the holiday festivities with a fresh palate and full heart. And never forget those cookies and fruitcakes sure to complicate those resolutions for the new year.
