(Paula Deen's) Lemon Bars

This is a very simple and labor-friendly recipe to work with, especially for those beginners who are just getting into baking. I first experimented with it during the last holiday season (2007) as I was preparing for our family's annual Christmas potluck. I was very pleased with the results when, at the end of the evening, I was left with only my empty platter. I had similar results when I baked another batch for the Lead Pastry Cook at work who then requested a copy of the recipe. One minor adjustment I would make however is to decrease the amount of sugar slightly than what the recipe had called for to suit my personal taste. That, however, depends on each individual's personal comfort zone for sugar content. My family in general are not into super-sweet treats of which nature many Western-style desserts are created, so when it comes to sugar, moderation is the key.   • Ingredients
  • Crust:
  • * 2 cups all-purpose flour
  • * 1 cup confectioners' sugar, plus more for dusting
  • * Pinch salt
  • * 2 sticks butter, at room temperature, plus more for greasing
  • Filling:
  • * 4 eggs
  • * 2 cups granulated sugar
  • * 6 tablespoons all-purpose flour
  • * 6 tablespoons fresh lemon juice

  2. Preheat oven to 350 degrees F. Lightly grease a 9 by 13 by 2-inch pan.
  3. Make the crust by combining the flour, confectioners' sugar, and salt in a large bowl. Cut in the butter to make a crumbly mixture. Press the mixture into the prepared pan. You may need to dip your fingers into a little flour or confectioners' sugar to keep the dough from sticking to your fingers. Bake for 20 minutes.
  4. Meanwhile, to make the filling, mix the eggs, granulated sugar, flour, and lemon juice. Pour this over the baked crust and bake for 25 minutes longer. Sprinkle with confectioners' sugar, if desired, when the bars are done.
