Courgette Tian (Baked Zucchini Squash and Tomatoes)

Courgette Tian is a classical French bistro dish. Tian is actually a Provencal baking dish, so anything baked in it takes its name, similar to clay-pot cooking in Chinese cuisine or tagines in Moroccan cooking. This version is simple with tender, juicy slices of courgettes, or zucchini squash, and tomatoes resting in a lively mix of olive oil, garlic and onions.

Ingredients:

3 tbsp olive oil
2 large onions, peeled and sliced
1 garlic clove, crushed
3 courgettes, thinly sliced on the diagonal
3 large tomatoes
Pinch of sugar

Start with a quick saute of the onions and garlic before laying them as the foundation for bite-worthy slices of courgettes and tomatoes, which should bake for approximately one hour in a shallow dish in a 400-degrees Fahrenheit oven.
