Griddled Lemongrass Chicken with Table Salad |

For a lighter, healthier dish that still delivers large flavors, try this Southeast Asian dish that features a lean, griddled chicken breast infused with lemongrass. A raw salad of crunchy, juicy vegetables and fruits adds a variety of nutrients and minerals along with fiber.
Ingredients:
4 skinless chicken breast fillets
3 lemon-grass stems, white part only, finely chopped
3 cloves garlic, chopped
1½ tsp caster sugar
1½ tsp fish sauce
2½ tbsp vegetable or sunflower oil
For the dipping sauce:
4 cloves garlic
1 red chilli, halved, deseeded and finely chopped
3 tsp caster sugar
juice of 1 lime
4 tbsp fish sauce
For the salad:
1 small slightly under- ripe mango
3 carrots, peeled and cut into fine batons
Half a cucumber, cut into fine batons
100g (3½oz) bean sprouts
small bunch of mint, leaves picked
small bunch of basil, leaves picked
125g (4½oz) large salad leaves, such as romaine, thoroughly washed
