Chicken and Peanut Butter Soup with Rice Balls

This traditional recipe from Ghana highlights both the diverse and universal nature of food around the world. Peanut butter, chicken, rice and garlic are staples in most American kitchens, but this recipe combines them in a departure from how Americans know them.

To make the soup, use:

1 x 1.4kg/3lb chicken, cleaned and cut into 16 portions
4 small onions, peeled and chopped
1 tbsp ginger paste
1 heaped tsp garlic paste
600ml/21fl oz chicken stock
455g/1lb smooth peanut butter
1 x 400g tin plum tomatoes
1 red pepper, de-seeded and roughly chopped
Salt, to taste

For the rice balls, use:

70g/2½oz basmati rice, per person
