Hot Chickpea Salad with Spring Onions and Parsley |

Chickpeas are a wonderful source of plant protein that also contains fiber for digestive health as well as crucial B-vitamins and antioxidants such as vitamin E. They are creamy and nutty, very satisfying with the bright sweetness of spring onions and refreshing parsley. Garbanzo beans are common in Mediterranean diets, which experts believe to be highly effective towards lowering the risk of developing cardiovascular disease.
This simple recipe only needs:
1 clove of garlic, peeled
3-4 tbsp of extra-virgin olive oil
1 x 240g tin chickpeas, drained and rinsed
The juice of half a lemon (if you have very good new-season olive oil that really tastes of something, you can omit the lemon juice)
2 tbsp finely chopped parsley
3 or 4 spring onions, finely chopped
